Truffles in Argentina
Before entering the world of truffles and their cultivation, it is important to know very well what we will be growing and what its origin is. In Argentina the cultivation is recent, in 2014 the first truffle was collected and since then each year more hectares are planted in our country, which has more than 26 million hectares suitable for cultivation.
Truffle Origin
Truffles are ectomycorrhizal symbiont fungi, which grow underground. Unlike other fungi that fruit on the surface and spread their spores through the air, truffles use the aroma they give off to achieve their dissemination, attracting invertebrate animals and vertebrates such as wild boars.
There are more than 180 species of this type of mushroom in the world. Only a few of these species are appreciated for their culinary value. Among the best-known truffle species we can mention Tuber melanosporum, Tuber magnatum, T. aestivum, T. borchii, T. brumale, T. uncinatum and T. indicum among others.
It is estimated that truffles appeared on our planet between 50 and 85 million years ago. The northern hemisphere is where most species emerge: Europe, Asia and North America.
Particularly between Spain, France and Italy is where the black truffle is naturally found. (T. melanosporum).
